Delicious Saint Nicholas Spice Cookies

As the holiday season approaches, the scent of sweet baked goods fills the air, inviting us to explore delightful alternatives. Saint Nicholas spice cookies, also known as speculoos cookies, are beloved treats in the Netherlands, Belgium, and certain regions of Germany during this festive time. If you’re cautious about trying new flavors, you might want to start with Spectacular Speculoos. These cookies are delicately thin, crispy, and nutty, offering a harmonious blend reminiscent of gingerbread yet delivering distinct spiced notes. The rich, flavor-packed dough is firm and easily moldable into whichever charming holiday shapes inspire you.

Ingredients:

1 cup butter

¾ cup brown sugar (softened if necessary)

2 cups all-purpose flour

1 ½ teaspoons baking powder

2 teaspoons ground cinnamon

1-2 ounces almonds, finely chopped (optional)

½ teaspoon ground cloves

¼ teaspoon ground ginger

1 teaspoon salt

1 teaspoon ground nutmeg

2 tablespoons milk

Instructions:

Begin by preheating your oven to 350°F (175°C). In a mixing bowl, combine butter and brown sugar, creaming them together until the mixture is light, fluffy, and well combined. Then, stir in the milk.

Gradually sift in all the dry ingredients, including nuts, and blend thoroughly. Don’t be alarmed if the dough appears a bit crumbly; this is normal. If it’s excessively dry, you can incorporate a small amount of additional milk. Shape the dough into a disk and refrigerate it for one hour in a covered container. After chilling, remove the dough and place it on a floured surface. You can also cover it with parchment paper or flour your rolling pin and roll it out to your desired thickness.

Here’s where you can unleash your creativity! Use cookie cutters in various festive shapes, or for a more customized approach, sketch your desired shape on paper, place it on the dough, and cut around it. Stars are a favorite in my household, often adorned with a dusting of powdered sugar once baked. Alternatively, consider making Santa shapes with lightly frosted beards; the sturdy dough easily accommodates intricate designs with just a toothpick.

Once all cookies are shaped and evenly thick, transfer them to parchment-lined baking sheets and bake until they achieve a golden-brown hue, approximately 13 to 15 minutes. Allow the cookies to cool slightly before adding any finishing touches like icing or powdered sugar. As the children settle down for the night, what better treat to accompany you than a plate of Saint Nicholas Cookies paired with a glass of sparkling red wine?
